Microencapsulation of Potential Probiotic Lactobacilli by Extrusion Technique

چکیده

In order to provide health benefits potential probiotic strains must be viable and metabolically active in the product and maintance their activity in gastrointestinal tract (GIT). Therefore, the current investigations are based on protection of probiotics by microencapsulation to increase survival and delivery of bacterial cultures to the GIT. Several reports have shown better survival of encapsulated Lactobacillus spp. ceels in calcium alginate beads in simulated gastric conditions . Calcium alginate has been used widely for encapsulation of lactic acid bacteria due to its low cost, easy of handling and non-toxic nature. The objective of this study were to evaluate the survival of entrapped lactobacilli in calcium alginate beads under simulated gastric juices and a bile salt solution and to monitore the cell counts in the beads during the storage at 4oC, for a period of 3 months.
